There is a small Catholic minority in the middle east and they follow the Lenten practice of no meat on Fridays. In this class, you’ll learn how to make Stuffed Grape Leaves, Mujudrah (Lentil-Rice Pilaf), Potato Kibbee (a vegetarian version of meatloaf), and Pickled Turnips and Beets. Other than the yogurt we’ll use as a condiment, everything we’re making is Vegan! This is a sunnier version of Lenten food that is so good you’ll feel guilty about enjoying it so much, but isn’t feeling guilty what Lent is all about!
